Your Cake Ingredients
8 ounces sour cream
½ cup brewed double-strength coffee, room temperature
½ teaspoon pure vanilla extract
2 squares (2 ounces) unsweetened chocolate
½ cup butter
1½ cups sugar
2 large eggs
1½ cups all-purpose flour, divided
1 teaspoon baking soda
1 teaspoon cinnamon, ground
½ teaspoon baking powder
½ teaspoon salt
Powdered sugar for sprinkling over the spice cake (optional)
You’ll also need a 13x9-inch baking pan or a 9-inch tube pan.
Mix It and Bake It
Preheat your oven to 325 degrees Fahrenheit.
Grease and flour the baking pan and set aside.
In a small mixing bowl, mix together the sour cream, brewed coffee, and pure vanilla until the ingredients are well blended. Set it aside for now.
Heat the chocolate and butter together until the butter is melted. You can do this one of two ways.
The microwave is the quickest way to do this, but sometimes while trying to guess how long it will take, the chocolate can burn. However, if you choose to use this method, heat the chocolate and butter on high for 1 ½ to 2 minutes, or until the butter is melted.
If you choose to use the stove method, you’ll need a small saucepan, aluminum foil, and a small glass bowl. Put about an inch of water in the bottom of the saucepan. Wrap the bottom of the glass bowl with aluminum foil so it fits snugly into the saucepan. Put the chocolate and butter into the bowl and heat over medium heat until the butter melts. Make sure to stir frequently to avoid burning the chocolate.
Once the chocolate and butter is melted, add the sugar and stir into the mixture until well blended.
Next, add one egg at a time to the mixture. After you’ve added both eggs and both are blended well into the batter, add the dry ingredients. Add ½ cup of the flour, baking soda, cinnamon, baking powder, and salt.
Now you’ll need the sour cream mixture and the remaining flour. To the batter, add the remaining flour and sour cream mixture alternately until everything is mixed well and the batter is nice and cake-like.
If you’re using the 13x9-inch baking pan, bake the mocha spice cake for 45 minutes or until a knife comes out clean from the center. If you opt for the 9-inch tube pan, bake the cake for 1 hour.
Allow the cake to cool on a wire rack for at least 10 minutes before removing from the pan. Sprinkle powdered sugar over the top if desired.
