Mint Chocolate Cookies

Mint Chocolate Cookies, or as Nestle calls them, Mint Chocolate Delights, are simply another version of Nestle's Toll House Chocolate Chip cookies made with baking cocoa, dark chocolate chips, and mint chocolate chips.

We found these chocolate chips during the holidays (especially Christmas and New Year!) and our store doesn't seem to carry them during the rest of the year, so if you see them, stock up!

Your Cookie Ingredients

Mint Morsels

  • 2 cups all-purpose flour

  • 2/3 cup Nestle Toll House Baking Cocoa

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup (2 sticks) butter, softened

  • 2/3 cup granulated sugar

  • 2/3 cup packed brown sugar

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 1 2/3 cup (10-ounce package) Nestle Toll House Dark Chocolate & Mint Morsels

Make the Mint Chocolate Cookies Batter

In a small bowl, combine flour, baking cocoa, baking soda, and salt.

In your mixing bowl, mix the softened butter, granulated sugar, brown sugar, and vanilla extract on medium speed until well blended. It should have a creamy consistency.

Add the eggs, one at a time, mixing after each addition.

Gradually mix in the dry ingredient mixture.

Stir in the morsels, making sure they're well distributed through the batter.

Place well rounded Tablespoon-size balls onto an un-greased cookie sheet.

Bake for 11 to 13 minutes or until the cookies appear puffy around the edges and set in the middle.

Cool on cookie sheet for a few minutes and then remove cookies to wire racks to cool completely.

Yield: about 4 dozen cookies

Just a few things I did differently:

I used the baking cocoa I had on hand since I didn't have Nestle brand.

Also, I always grease my cookie sheets or use parchment paper because when I don't, the cookies stick to the sheet.

I use Air Bake cookie sheets, so perhaps that makes a difference.
