Ingredients for Your Chocolate Covered Strawberries Recipe
- 2 cups semi-sweet chocolate chips
- 2 Tablespoons shortening
- 1 pound fresh, ripe strawberries
First Melt the Chocolate Chips
You have two options when it comes to melting chocolate. Melt them in the microwave or over a double boiler. My experience with melting chocolate chips in the microwave has been hit or miss. Sometimes the chips melt too much and burn on the bottom and other times it melts perfectly.
Don’t have a double boiler? No problem! Put a medium-size saucepan with about 2 inches of water in the bottom on to the stove top.
Find a glass bowl that will fit into the top of the saucepan – it should sit above the water, not into the water. Put the shortening and the chocolate chips into the bowl and set it aside.
Bring the water in the saucepan to the boiling point and then turn off the heat. The pan stays on the burner.
Place the bowl with the shortening and chocolate chips on to the top of the saucepan. In a few short minutes, the chocolate chips will begin to melt. Stir the two ingredients together as the chocolate melts to ensure they’re well blended.
Dipping the Strawberries
It’s time to dip your washed and dried berries into the creamy melted chocolate concoction.
To make the dipping easier, stick each berry with a toothpick or short skewer. Dip the berry into the chocolate and twirl it around so the excess chocolate drips off.
Place the chocolate covered strawberries onto the prepared wax paper covered cookie sheets. The dipped strawberries will need to cool completely and then they can be placed into the refrigerator until you’re ready to serve them.
This chocolate covered strawberries recipe and most others will stress that the berries can be kept for about 24 hours like this in the refrigerator in an airtight container. After that point, the berries tend to get soft and can taste funny, so serve these as quickly as possible after making them.
I’ve made these the night before the party and they taste great! That way, there’s not as much of a scramble to get them done the day of the party.
To make these even prettier, drizzle melted white chocolate over the chocolate or dip just the tips of the berries into white chocolate to give the berries a two-tone appearance.
