Chocolate Zucchini Cake

Quick Prep:

Preheat oven to 325 degrees Fahrenheit.

Grease and lightly flour a 9x13 pan. Set aside.

Chocolate Zucchini Cake

Your Cake Ingredients

  • 1 cup brown sugar

  • 1/2 cup white granulated sugar

  • 1/2 cup butter

  • 1/2 cup canola or vegetable oil

  • 3 eggs

  • 1 teaspoon pure vanilla

  • 2 ½ cups flour

  • 1/2 teaspoon allspice

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 2 teaspoons baking soda

  • 1/4 cup baking cocoa

  • 1 ¼ cups ground zucchini – about 1 medium sized zucchini, peeled

  • 1 ½ cups chocolate chips (for topping) – equals about 2/3 bag of 12-ounce bag of chips


Chocolate Cake Recipe Instructions



Cream the brown sugar, white sugar, and butter together until it has a creamy consistency. Add the oil, eggs, and pure vanilla to the mixture. Mix again until it’s creamy.

In a separate bowl, mix together the flour, allspice, salt, cinnamon, baking soda, and baking cocoa.

Grate your peeled zucchini into another small bowl or directly into a measuring cup.

Once the wet mixture is well blended, add about ½ of the dry mixture to the batter and mix. Then add ½ of the zucchini and mix. Add the rest of the flour mix. Add the rest of the zucchini and you will end up with a beautiful batter. It should have a light brown, chocolate-mousse-like appearance.

Pour the batter into your prepared pan. Sprinkle the top with the chocolate chips so they’re evenly distributed.

Bake for 45 minutes at 325 degrees Fahrenheit.

Chocolate zucchini cake is the perfect potluck dessert and it’s fancy enough for company too. Serve with ice cream and freshly brewed coffee for a delicious combination.
